"Smit" started BBQing for his Piedmont High School friends back in the 1970s. Since then he has refined his BBQ skills with his specialty - BBQ TriTip sandwiches. His BBQ is a three step process. First, the hand picked tri-tip is marinated for at least 72 hours on ice in his "special marinade". Second, as the meat is on the BBQ smoker for at least two hours, the meat is constantly turned and brushed with his marinade. Lastly, once off the BBQ, the tri-tip is immediately covered and baked for another hour. |
